No-Bake Chewy Granola Bars

   I have been wanting to make homemade granola bars for the longest time and finally found the perfect reason to get off my butt and make them! Cooper has a Farmer's Market (a healthy bake sale) at school next week so I thought I should give the recipe a try before sending them off to school. These granola bars are even better then I had imagined. The cooking of the butter and sugar give it a carmely candy taste, yum!

No-Bake Chewy Granola Bars
2 cups quick cooking oats
1 cup rice crispy cereal
1/4 cup shredded coconut
1/4 cup butter
1/4 cup honey
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp vanilla

1. In a large mixing bowl. mix together the oats, cereal and coconut.

 2. Melt the butter in a small saucepan.
3. Add the brown sugar, honey, salt and vanilla. Stir as it comes to a boil. Boil for 2 minutes and 15 seconds.
4. Pour the mixture in the oats and mix together until all the oats are completely coated.
5. Press firmly into a greased (I used coconut oil) 9x13 pan. 
6. Refrigerate for 20 minutes and cut to size.

Happy 4th Birthday Cooper!

Dear Cooper,

       It’s hard to believe that you are 4 whole years old today (not because it seems like just yesterday you were born but because it feels like a lifetime, in a good way). Each passing day, you shed more and more baby giving way to the little man you are destined to be. You are sweet, affectionate, funny, but best of all happy! I can’t believe I get to be the mommy of such a beautiful soul, how did I get so lucky?
      
      I love when you kiss your brother’s boo-boos when I can’t and how you always wake up with a smile on your face. I can’t resist when you say “mommy snuggle” and it cracks me up when you insist that you are allergic to things like fog and fresh laundry.

      Happy, Happy Birthday to the boy who rocked my world in the best possible way!

Crockpot Salsa Chicken

  

   I have been making crockpot salsa verde chicken for awhile now. It's as easy as it is delicious. A friend of mine had mentioned that she made the same but used red salsa. It sounded amazing so I decided to give it a try. I was surprised to find out that it is even better then the verde chicken!

Crockpot Salsa Chicken
4 chicken breasts
1 Jar of Pace Medium Salsa
1/4 tsp garlic salt
1/2 tsp cumin

Directions:
Put all ingredients in the crockpot and cook on low for about 4 hours. The chicken should begin to fall apart on it's own.

   I served mine in a taco salad with lettuce, cheese, avocado and black beans. It was amazing, can't wait for leftovers!

Happy 2nd Birthday Owen!

Dear Owen,

Today you turn two! I can’t believe how big you are and all that you are capable of! You are a sweet mama’s boy and I love you to the moon and back! This year has been so good to you! You learned to walk, talk and even pee pee in the potty! You completed our family in the most beautiful and perfect way, thank you!

I love that you refer to yourself as “Punka” and always ask for cookies for breakfast even though you know the answer will be no. It bring me so much joy to watch you keep up with the big kids and hold your own.

On your birthday I am wishing you a lifetime full of love, laughter and good health. Please remember that I love you always, no matter what! You will always be my baby, no matter how big you grow. I can’t believe how lucky I am to spend my days being your mommy! Thank you for being you, I can’t wait to see what this next year brings!

Cooper's First Day of School

   Today was Cooper's first day of school in his new big boy classroom. He was a little nervous but once he saw his best buddy Jaxon, all was good in his world! He had a great day with his new teachers and I couldn't be more proud!

He may not be their most famous player, but he is a really good guy and a great role model for Mr. C. Today was costume day at camp and Cooper insisted on dressing as Skip, pretty cute right?!
