Breakfast Cookies

   I'm always looking for a great breakfast on the go. This "cookie" is not only great for breakfast, but makes a great snack anytime. Cooper likes them too which is a total bonus!

Ingredients:
1 1/2 cups regular rolled oats
1 cup coconut flakes
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 cup of flax seed meal
1/2 cup finely chopped nuts of your choice (I used sliced almonds)
1 cup dried fruit of your choice (I used dried cranberries)
3 ripe bananas, mashed
1/4 cup canola oil
1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350 degrees.
2. In a large bowl, combine all ingredients and stir until well combined.
 3. Put golf ball sized pieces directly onto a cookie sheet.
4. Bake for about 20 minutes or until edges are golden brown. 
 Enjoy!
